Top tips for BBQ success

  • Tie a bunch of rosemary or mixed herbs together and soak in a bowl of beer or wine, then use it to brush onto your food during barbequing.
  • Try red wine with beef and white white with chicken - it enhances the flavour and stops the meat drying out. Herbs
  • Fragrantly flavour your barbeque food by adding 'hard' herbs, such as rosemary or thyme, to the coals. Your food will be infused with a herby taste and the aromas will help cover up any burning smells too, which will really get the taste buds going!
  • For an easy pud that the kids will love, try threading marshmallows and chucks of fresh fruit, such as pineapple, strawberries and plums, onto pre-soaked wooden skewers. Cook on your barbeque until the marshmallows begin to melt.
  • Make sure that you've cooked your chicken properly by starting it off in the oven and finishing it off on the barbeque for that chargrilled taste. Chicken
  • For optimum BBQ cooking wait until the flames have died down and the coals are glowing red with a light grey coating of ash.

BBQ Safety Tips

Don't let food bugs and fierce flames spoil your party. Here's how...

  • When cooking, turn your food regularly to ensure it's cooking evenly.
  • With burgers and sausages, poultry and game, cook until all juices run clear with no pink flesh.
  • Trim fat and shake off excess marinade to avoid flame flare-ups.
  • Oven cook big batches first then "smoke off" on the barbecue.
  • Raw meat can harbour harmful bacteria, so keep it in a sealed container away from cooked food.
  • Rare's OK with whole cuts of meat, such as steaks, cutlets and joints, as bacteria are found on the surface.
