Jewel Jelly

One of the top tastes of summer, berries are great in smoothies, puddings and sauces. Just serve with ice cream, fresh cream or Greek yogurt; or sprinkled on muesli for breakfast or a snack. You could even purée raspberries to add to a salad dressing. Or try this easy-to make jelly.

  • Serves 6
  • Preparation time 15 minutes,
    plus 3 to 4 hours setting time
  • Ingredients

    • 100g blueberries
    • 100g blackberries
    • 100g raspberries
    • 1 x 135g pack strawberry jelly

Instructions

  1. Mix together the blueberries, blackberries and raspberries, reserving a few for decoration. Make the jelly according to the instructions on the pack and allow to cool slightly.
  2. Rinse six individual jelly moulds with cold water (or use one 600ml mould or basin) but do not dry. Divide the fruit between them, then pour over the jelly. Cool further, and then place the moulds in the refrigerator for 3 to 4 hours or overnight until firmly set.
  3. Dip the base of each mould into a basin of boiling water for 5 seconds, then invert onto a plate. Serve decorated with the reserved berries.
